My mother in law is on dialysis. What are some good recipes that are healthy for her?

I know that she is supposed to be on a high protein restricted diet, but she doesn’t really like meat very much. It’s really difficult to get her to eat anything at all. Oh, and she’s also diabetic

Here’s a fantastic website with tons of dialysis friendly recipes. It’s great because it gives you the exchanges and nutrition information she needs to know for both her conditions.
